Low-Carb Teriyaki Chicken Recipe

INGREDIENTS
Chicken Fillet , 1.3 pounds (600 grams)
1 tablespoon oil for cooking
1/4 cup soy sauce (low sodium)
a third of a cup of light brown sugar (or white granulated sugar)
3 tblsp. Sake for cooking ( (rice wine vinegar or apple cider vinegar)
Mirin, 2 tablespoons (optional — white wine or dry sherry can be substituted)
Optional: 1 tablespoon sesame oil (adds a wonderful flavour)
2 teaspoons garlic minced (2 garlic cloves)*
1 sliced shallot/green onion stem to serve as a garnish
4 cups gently steamed broccoli florets
2 teaspoons water + 1 teaspoon cornstarch (or corn flour) (ONLY IF NEEDED)

INSTRUCTIONS
In a  skillet, heat the cooking oil over medium heat.
Stir fry the chicken until it is lightly browned and crisp, about 5 minutes.
Whisk together the soy sauce, sugar, Sake/vinegar, Mirin, and sesame oil in a small jug or bowl.
Add the garlic to the pan's center and cook until it's mildly fragrant (about 30 seconds).
Pour in the sauce and simmer, stirring constantly,
until it thickens into a lovely shining glaze (approximately 2-3 minutes).
