"Happy Narnia Day!!! It's Narnia's 70th Anniversary today! In honor and celebration of Narnia, I decided to make Mrs. Beavers Sticky Marmalade Rolls from The Lion, the Witch and the Wardrobe book. I have enjoyed making this so much. It was so good! You should definitely make it. So I hope all of you will or did enjoy it. Thanks so much for watching! :) I really appreciate it. STICKY MARMALADE ROLLS
Ingredients
Powdered/Confectioners' Sugar
1 cup cake or all-purpose flour, sifted before measuring
2 teaspoons baking powder
1/4 teaspoon salt
3 large eggs
1/4 cup cold water
1 cup granulated sugar
1 teaspoon vanilla
1/2 orange marmalade

1. Line a 10' x 15' x 1' jelly roll pan with buttered parchment paper. Spread out a tea towel and sprinkle it with powdered/confectioners' sugar. Pre-heat the oven to 425 degrees F.

2. Sift together the flour, baking powder, and salt.

3. Using an electric mixer, beat the eggs until they thicken slightly and become lemon colored. Continue to beat while adding the water and the sugar.

4. With a spatula, fold the dry ingredients into the egg mixture until they disappear. Stir in the vanilla.

5. Pour into the prepared pan, spreading to the edges. Bake 10-12 minutes, checking for doneness after 10 minutes, The top of the cake should be light golden and firm to the touch. Remove from the oven.

6. Invert the cake on the tea towel and carefully remove the paper. Immediately spread all but 2 tablespoons of the marmalade evenly over the surface of the hot cake. Starting with a long edge and using the tea towel as a help, roll the cake into a log. It may crack slightly. Spread the reserved marmalade over the top of the cake and sprinkle with a little powdered/confectioners' sugar. Allow the cake to cool before cutting.
