Whether it's packing my kids school lunchbox, knowing that they'll think about home when they open it, or making dinner in the mornings so my family has something warm to gather around in the evening. Mediterranean Chicken
8 Chicken thighs (about 2-1/2 pounds), small
1 1/2 tsp Oregano, dried
6 Garlic cloves
1 cup Green olives, pitted
2 Tablespoons Brown sugar
1 Teaspoon pepper
3 Tablespoons Red wine vinegar
1/3 cup chicken Stock
Parsley to sprinkle on top
Couscous
1 box Couscous
1 Log Plain Goat Cheese
Chicken stock as desired
