I’ve noticed persimmons starting to show up in the grocery store, and I got 4 lovely ones this last weekend in my Bountiful Baskets so I decided to make Persimmon Salsa!

Here’s the recipe I made up:

3 medium persimmons, skinned and chopped
1 jalapeño
1/8th medium onion
Handful of pomegranate seeds
2 T fresh basil
1 tsp fresh squeezed lime juice
1 T olive oil
Dash of salt

Combine all ingredients together and let marry for an hour or so in the fridge. Tastes really good served with thin restaurants style tortilla chips!
