a by the seat of the pants recording of how we make bacon. Other than my bad math about the only clarification is I would smoke the bacon or ham by day 14. I wouldn't leave it sit in the fridge longer cause I believe the flavor wouldn't start to degrade. I also have no Idea how long it would take for the meat to go bad. Even with curing salt and salt I doubt it's long term shelf stable even in the fridge due to the high moisture content. So with these bacon's and ham I recommend smoking between day 7 and 10
