Pilaf, or as they said in Persia, pilav is a very ancient dish that was born in the Middle East with the appearance of the grain rice culture there, around the 2nd-3rd centuries BC. It was then that the Turkic nomads began to exchange cattle for rice grains in China. The first mentions of pilaf as a festive dish can be found already in the texts of the pearl of Arab culture “One Thousand and One Nights”.
