I had a bunch of ginger I was going to use right away, so I chopped it up until small bits after peeling it, and spread it out in a single layer on foil and put it into the oven on the lowest temp for about 8 hours until it was all dried.

Then I just used my spice grinder to make fresh ginger powder!
