This simple and easy recipe can be made with fresh or frozen berries. It's vegan, dairy free, oil free and sugar free with soft white whole wheat flour for a healthy snack or dessert! Double the recipe for larger rice cooker or if baking in a large pan in the oven. Enjoy!

Berry Bars Healthy Recipe | Blueberry Raspberry Vegan Bars | EASY RICE COOKER RECIPES

NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
* Aquafaba is the brine or juice from cooked garbanzo or chickpea beans

INGREDIENTS:
• 3 tbsp (48g) AQUAFABA (sub with 1 egg if non-vegan)
• 1/4 cup (35g) CHOPPED DATES
• 1/3 cup (90g) MASHED BANANAS
• 1 tsp (2g) LEMON ZEST
• 1 tsp (5g) LEMON JUICE
• 1/4 cup (60ml/60g) ALMOND MILK
• 1 tsp (5ml/6g) PURE VANILLA EXTRACT
• 1 cup (140g) SOFT WHITE WHEAT FLOUR (pastry wheat flour)
• 1 tbsp (12g) CHIA SEEDS
• 1 tsp (5g) BAKING POWDER
• 1/8 tsp SEA SALT
• 1/2 cup (80g) BLUEBERRIES (fresh/frozen)
• 1/2 cup (63g) RASPBERRIES (fresh/frozen)

HOW TO MAKE IT:
1. Using a blender or smoothie maker, blend aquafaba, dates, banana, lemon zest, lemon juice, almond milk and vanilla extract until smooth
2. Whisk together flour, chia seeds, baking powder and salt
3. Mix the wet and dry mixture together until incorporated
4. Lined pot/pan with parchment paper and add half of the batter, smooth onto the bottom as much as possible. Sprinkle blueberries evenly onto the batter. Now spread the rest of the batter then top with the raspberries
5. Bake for 1 bake cycle (30 min) and check. Rice cooker varies so bake longer as needed
6. Cool 5-10 minutes and enjoy them warm

OVEN BAKING:
Bake in greased and lined pan, in pre-heated oven of 350F (180C) for 25-35 minutes. Ovens varied so check about 22 minutes and bake longer as needed
