In this video I want to share with you my version one of my favourite Italian dishes, aubergine parmigiana. A humble but very delicious recipe that is super easy to make, and my version is completely waistline friendly!

INGREDIENTS
2 aubergines
600ml of tomato sauce (home-made or shop bought)
250gr of Mozzarella cheese
A handful of fresh Basil leaves
Grated Parmesan or Grana Padano cheese to taste
