Homemade Ginataang Bilo-Bilo is one of Filipino's favorite desserts. It's a mix of fruits with Tapioca Pearls and Glutenous Rice Balls in Coconut Cream Sauce. It's best for snack time. Can serve hot or cold.

Ingredients:

3 cups - Glutenous Rice Flour
1 1/2- cups water
2pcs.medium - Purple yam (cubed)
5-6pcs - Langka or Jackfruit (julienned)
1pack - Tapioca or Sago
10pcs.- Saba (sliced)
2cups- Coconut Cream
1cup- Fresh milk or Evaporated milk
1 1/2cups- Sugar
2cups- Water

How to cook Sago:

Boil water and put Sago. Turn the heat into medium. Stir for 1 hour to prevent sago from sticking from the bottom of the pan. Turn the heat off. Soak sago for another hour. Rinse sago using tap water. Repeat this process again or until no more whites in the center of sago.

How to make Bilo-Bilo:

For every 1 cup of Glutenous Rice Flour, mix with 1/2 cup water. Make a soft mixture. Scoop 1 1/2 tsp. and roll a ball. Don't make it too big because it will expand once cook.

Boil saba for 10 minutes first. Then add coconut cream, Bilo-Bilo, Jackfruit, milk and sugar. Simmer for 5 minutes. Add Purple yam and simmer for 2 minutes. Bilo-Bilo floats once it cooked. Add sago and stir occasionally. Stir for another 30 minutes.
