Soft and Fluffy Cheesy Ensaymada Recipe

INGREDIENTS
* 2 1/4 cups All Purpose flour
* 1/4 cup sugar
* 1 teaspoon salt
* 2 teaspoons Active Dry yeast
* 1/2 cup milk
* 1 large egg
* 1/4 cup butter (softened at room temperature)

WATER ROUX:
* 1/4 cup All Purpose Flour
* 1/2 cup water

TOPPINGS:
* 1/2 cup unsalted butter, softened
* sugar
* sharp cheddar or mixed Mexican cheese, grated

INSTRUCTIONS
1. Brush bowl with melted butter and set aside.
2. Mix water roux ingredients and cook in slow heat until thick until you reach a paste-like consistency. Or microwave for 30 seconds then 10 seconds until thick. Set aside
3. Mix warm milk and the yeast. Set aside for 5- 10 minutes until bubbles form.
4. Mix flour, salt and white in the work bowl of an electric mixer. Add the proofed yeast and mix using a spatula.
5. Add the egg and mix until dough is incorporated. then add the water roux mixture and mix until dough is incorporated.
6. Add the butter then mix.
7. Knead the dough for 15 to 20 minutes or until smooth and elastic at medium speed using an electric mixer. You could also knead manually. Do the window pane test. Do the window pane test. The dough is slightly sticky, soft yet stretchy,and pulling away from the edge of the bowl.
8. Grease bowl with a little bit of oil. Then transfer the dough in and cover with cloth or plastic wrap and let rise in a warm place for an hour until it doubles its size.
9. When ready, punch the dough and work on it in a floured surface. Divide the dough into even pieces or depending on the size of ensaymada you want. For an evenly sized dough, use a kitchen scale.
10. Form each piece into a log and coil dough from one end to another end. Transfer the roll and put into a prepared pan and let it rise for 30 minutes or until it doubles in size.
11. Bake in a pre heated 350 F oven for 15-20 minutes. Let cool before frosting.
12. Soften butter and spread on top of the bread. sprinkle with sugar and cheese. You can also mix the butter and sugar first and frost into the Ensaymada and add the cheese.
