Pork Menudo Recipe (Pang fiesta)

Ingredients
* 3 kls. pork, bite-size pieces
* 1 cup soy sauce
* 1 piece lemon
* 1 big onion, chopped
* 4 tbsp. garlic, minced
* 8 pieces bay leaves
* 3 to 4 cups water
* 16 oz. or 170g tomato paste
* 1 kls. pig liver, bite-size pieces
* 2 pcs. chorizo de bilbao, sliced
* 6 big potatoes, cut into cubes
* 3 big carrots, cut into cubes
* 1/2 kls. hotdog, sliced diagonally
* 3 bell peppers, red & green, squares
* cooking oil
* 3 tbsp. brown sugar
* 1 tbsp Salt
* 1 1/2 tsp. pepper

Instructions
* In a large bowl, combine pork, soysauce, and lemon. Marinate for at least 1 hour.
* In a large pan, heat oil. Sauté onion and garlic.
* Add the marinated pork stirring until all sides are no longer pink.
* Add water and bay leaves then mix.
* Pour in tomato paste and mix then add chorizo. Cover and simmer for 30-40 minutes or until the pork is tender. Add more water as needed.
* Add the liver and cook for a few minutes.
* Add potatoes, carrots, hotdogs, bell pepper, sugar, salt, and pepper. Cover and let it simmer, stirring from time to time, for 15-20 minutes or until vegetables are tender.
