MONGOLIAN PORK WITH MUSHROOM AND BROCCOLI

INGREDIENTS
Marinade:
* 2.2 lbs or 1 kl pork butt, cut into bite-size
* 2 tbsp water
* 1/4 cup soy sauce
* 1 tbsp Shaoxing (Chinese) wine
* 2 tablespoons cornstarch
* 3 tbsp. Hoisin sauce

Sauce:
* 1/2 cup low sodium soy sauce
* 1/3 cup water
* 1/3 cup brown sugar
* 1 tbsp oyster sauce
* 3/4 tbsp ground white pepper

Stir Fry:
* Cooking oil, as needed
* 1 tbsp. sesame oil
* 1/4 cup garlic, minced
* 2 tbsp ginger, minced
* 1 Broccoli , cut into florets
* 3 cups Shiitake mushrooms or any type of mushrooms, sliced
* 4 green onion, sliced thinly

INSTRUCTIONS
* In a bowl, add the marinade ingredients together until well combined. Marinate and refrigerate the pork for 30 minutes.
* In a small bowl, mix together the sauce ingredients until well combined. Set aside.
* Heat pan first, then add cooking oil in medium heat. Fry the marinated pork in batches until they are just brown and cooked. Remove the pork and set aside, leaving some oil in the pan.
* Add the sesame oil in the pan with any remaining oil in medium heat, sauté the garlic and ginger until fragrant. Add the mushrooms and sauté for 30 seconds until cooked. Add the broccoli and stir fry until they are just tender.
* Add the pork back into the pan and mix. Pour the sauce over the pork and broccoli. Simmer in the sauce until the pork is cooked through.
* Add the green onions. Cook for a few minutes or until the sauce thickens.
