Moist Zucchini Muffins Recipe
Ingredients:
* 2 cups all purpose flour
* 1 cup brown sugar
* 1 tsp baking powder
* 1 tsp baking soda
* 1 tsp salt
* 2 tsp ground cinnamon
* 1/2 tsp nutmeg
* 1/2 tsp ground ginger
* 2 cups grated zucchini, drained
* 1 cup pecans, chopped
* 2 large beaten eggs
* 1/2 cup butter, softened
* 1 cup sour cream or plain yogurt
* 2 tsp vanilla extract

Instructions:
* Preheat oven to 400 degrees.
* In a large mixing bowl, combine flour, sugar, baking powder, baking soda, salt,cinnamon, nutmeg and ground ginger. Mix thoroughly. Set aside.
* Wash and pat dry zucchinis in a paper towel to remove excess water.
* Grate zucchinis using a cheese grater.
* In a larger mixing bowl, Add in butter, sour cream, and vanilla. Mix well until smooth.
* Add in egg and mix again.
* Add the dry ingredients to the wet ingredients. Then add the grated zucchini. Stir until just combined. Don't over mix.
* Stir in chopped pecans.
* Divide the batter equally amongst the muffin cups using an ice cream scooper or a spoon.
* Bake at 400 for 20-25 minutes or until golden brown and a fork comes out clean.
