For the moment you all have been waiting for. Today we are making Birria for Quesabirria Tacos Estilo Coco | Birria Tacos. If you love Mexican food and have never had this before, this is a must! This one was so good it made my eye makeup drool. Talk about packed with flavor, so juicy, so moist, and beyond filling.

INGREDIENTS:
• Prayer and Love 🙏🏾🥰
• Beef chuck for Roasting - 2-3lbs
• Chile Arbol - 2 chiles
• Chile Guajillo - 5 chiles
• Chile ancho or pasilla (you choose) - 5 chiles
• Garlic Cloves - 5-6 cloves
• Bay Leaf - 4-6 bay leafs
• Cinnamon Stick - 1 stick
• Oregano - 1 tbsp
• Cumin seed - 1/2 tsp
• Peppercorn - 10-12 peppercorns
• Thyme - 2-4 sprigs
• Onion - 1/2 onion
• Chicken Stock - 1 cup
• Caldo de pollo or res - 1/4 cup
• Water - 1 - 1/2 liters
• Red Wine - 1/4 cup (if you don't have red wine, 2 tbsp white vinegar will do)

FOR THE TACOS:
• Corn tortillas
• Cheese - Mexican blend, Queso Oaxaca, Mozerella, Monterrey Jack
• Chopped Cilantro
• Chopped Onion
• Lime
