CREAMY CARROT SOUP RECIPE
INGREDIENTS:
2 pounds of chopped carrot
2 tablespoons of divided oil
Salt and pepper to taste
1 medium onion cut into cubes
3 chopped garlic cloves
1 tablespoon grated fresh ginger
1 teaspoon of ground coriander
½ teaspoon of saffron
4 cups of low sodium vegetable broth
1 can of unsweetened coconut milk

INSTRUCTIONS:
Preheat oven to 425°F and line a large, embroidered baking sheet with parchment paper.
Place the carrots on the baking sheet.
Drizzle with 1 tablespoon of oil and season with salt and pepper and mix well.
Bake in preheated oven until carrots begin to caramelize and are tender on fork, about 25 to 30 minutes, stirring halfway through.
Meanwhile, heat the remaining 1 tablespoon of oil in a large saucepan over medium heat.
Cook onions until soft and translucent, about 5-7 minutes.
Add garlic, ginger, cilantro and turmeric and cook until smelling good, about 30 seconds.
Add the vegetable stock and lower the heat until the carrots are roasted in the oven. Transfer the carrots to the pan (reserve some to cover the soup) and blend with an immersion blender (or regular blender, in batches) until desired consistency. Add unsweetened coconut milk and serve topped with fresh cilantro and crispy bread if desired.
