Select, then Choice and the best is Prime! Ok with your steak and my reference to Kroger. Our local Kroger does have select grade meats and Choice is available. Some stores like Publix and Ingles do not sell select grades only Choice and some even Prime cuts. So if you want a GREAT cubed steak choose a choice cut and look at it So if you are shopping at Walmart or Kroger or a grocery chain that does sell the select grade (which is a lower cost cut of meat) then you may notice more of the tendon in the meat.
Hope this clears up why I said Kroger as a meat reference. Now some regional Krogers may be different, but you would have to ask the butcher. Many stores don't even have a butcher. My local meat market here where we live sells select grade beef. So just because you go to a local butcher or meat market doesn't mean a you are getting a better steak! Restaurants serve Prime beef! Select, then Choice and the best is Prime!
