My Layered Pound Cake
I USE 8” LAYERS, YOU CAN USE 9” LAYER PANS
1 1/2 CUP SALTED BUTTER (ROOM TEMPERATURE)
2 1/2 CUPS GRANULATED SUGAR
8 RAW EGGS (SEPARATED AT ROOM TEMPERATURE)
3 1/4 CUPS ALL-PURPOSE FLOUR (IF USING SELF-RISING OMIT BAKING POWDER AND SALT)
2 TSP. BAKING POWDER (OMIT IF USING SELF-RISING FLOUR)
1 TSP. SALT (OMIT IF USING SELF-RISING FLOUR)
1/4 CUP CORN STARCH (THIS IS A REVISION TO MAKE CAKE SOFT)
2 TSP. VANILLA FLAVORING
1 CUP MILK or CANNED MILK
Preheat the oven to 325 degrees. Beat Egg whites until stiff peaks form and set aside.
Use stand mixer and put butter and sugar in mixing bowl and beat well. Now add egg yolks one at a time. Add baking powder & salt (if using all-purpose flour). Add vanilla. Sift Corn starch into flour. Now add flour 1/2 cup at a time to the mix alternating with milk. Mix for 2 minutes. Bake in at least 3 layers. Bake at 325 degrees until toothpick comes out clean. Do not check cake until at least 30 minutes has passed. It should take around 40 minutes. Check often and do not overcook.
For a thin layer cake: You can split the layers with a bread knife while frozen or very cold from the refrigerator, but if you are not an experienced cake decorator it is best to bake thin layers separately. The cook time will vary depending on cook thickness of layers.

Fudge Frosting
8 CUPS POWDERED SUGAR
3/4 CUP COCOA
3/4 CUP EVAPORATED MILK
1 1/2 STICKS SALTED BUTTER OR MARGERINE
DASH OF SALT
2 TSP. VANILLA
Add powdered sugar to mixing bowl. Add a dash of salt. Add cocoa a little at a time as you are whisking the powdered sugar on low. Scrape the sides with a spatula to make sure it is mixed well.
Add evaporated milk to a liquid measuring cup. Add 1 1/2 sticks of softened butter to same measuring cup. Put in microwave until it is boiling.
Add the liquid into mixer once boiling and mix on medium speed. Add vanilla extract. If it is too thick add water a tablespoon at a time until it reaches desired texture (it will thicken as it sits).
NOTE: Ice cake immediately.
