Sotanghon Guisado: An All-Time Favorite Meal

Ingredients: 250 grams Bean Thread (Sotanghon), 1/4 kg Pork Belly (chopped), 1 Large Sayote/Chayote (sliced), 1 Medium Cabbage (sliced), 5 Small Carrots (sliced), 3 Cloves Garlic (minced), 1 Bulb Onion (sliced), 4 Cups Water, 3 Tbsp Soy Sauce, 1 Tsp Salt, 1 Tbsp White Sugar, 1 Seasoning Mix (Magic Sarap), Cooking Oil, 6 Pcs Calamansi fruit (sliced)

Note: In boiling the pork belly, you can cover the pan with a lid to make it tender faster. Don't overcook the noodles(sotanghon). You can just soak it in the pan for about 10 seconds then letting it cook along with the vegetables. You can salt and sugar to taste according to your desired flavor. If you want a darker color for the sotanghon guisado, add soy sauce to your desired taste. Don't overcook the vegetables. A half-cooked cabbage is enough.

Variation: Sliced calamansi fruits are best served with the sotanghon guisado. You can add black pepper if desired.
