Char-Griller Gravity 980 First Impressions
Hey Everyone, we finally got our hands on the new Char-Griller Gravity 980 cooker and I can't wait to tell you some of what I’ve found in my limited time working with this beast. Today I'm going to give you my biggest first impressions when it comes to this cooker. To begin with the obvious, this cooker is heavy. What this means is this cooker is built to last. The gravity 980 is fully insulated from the entire cooking chamber to a triple insulated charcoal hopper. This means it will perform well in the elements and should also be fuel efficient. The second thing is this cooker is well thought out. Everything from the assembly, to the fan controller right down to the integrated grease removal tray. Specifically, the way the fan controller is calibrated to bring this cooker up to temp quickly but avoid overshooting temperatures, and then maintain a target temperature in an insulated cooker like this is an impressive feat. Sometimes with insulated cookers if you put a fan system on them coming up to temperature they will overshoot and then because of the great heat retention through the insulation they don't come back down. Happily this is not the case at all with the new gravity 980. I’ve ran a lot of fan controllers, or draft systems, and this one performs incredibly well, exceeding my expectations. Lastly the way the heat and smoke come through this cooker surprised me, I didn’t know it would be designed like this but the fact that it is is a slam dunk on Char-Grillers Part. What I’m talking about is the way air and smoke travel from the charcoal hopper into the cooking chamber is right through the fire in the bottom of the hopper. What this means is if you’re using some green wood, or perhaps a little too much wood and creating a dirty smoke, pulling that smoke through the fire works sort of like a catalytic converter in a car and burns off the compounds we don't want on our food leaving us with just delicious smoky flavor. When I saw that I was blown away. I’m really looking forward to exploring what this cooker can do because it has a ton of promise.
