CARAMELIZE THE BANANAS
Ingredients:
Crystal sugar - 100g
Sliced ​​bananas ― 620g

Preparation mode:
1 ― Put the sugar in the pan to melt. When the sugar is caramelized (always over low heat), add the bananas, mix gently and cover for approximately 5 minutes.
2 ― Cook until bananas are tender. Set aside until cool.

CREAM
Ingredients:
UHT milk - 240ml
Condensed milk - 400g
Bella Vanilla PURE FLAVOR flavoring paste ― 5g
Egg yolks - 80g
Wheat flour - 10g
Corn Starch ― 10g
Whipped cream - 400g
Corn or milk biscuit ― 60g (to decorate)

Preparation mode:
1 ― In a saucepan over medium heat, add the milk, condensed milk and vanilla flavoring paste and stir until it boils.
2 ― In a bowl, beat the yolks with a fouet until the mixture is fluffy and pale. Add cornstarch and mix in egg yolks. Add the wheat flour and mix until smooth.
3 ― Pour half the hot milk into the egg yolk mixture to season them. Then return everything to the pan.
4 ― Cook the cream over medium heat, stirring constantly, until it starts to thicken, for about 5 minutes. Reserve in refrigerator until completely cool.
5 ― Add half of the whipped cream to the reserved yolk cream. Gently mix until incorporated. Set aside the other half of the whipped cream to decorate.

Mounting:
1 ― In an individual glass jar or glass, make the assembly alternating layers with the yolk cream, caramelized bananas and cracked biscuits.
2 ― Finish with the whipped cream on the topping, as a decoration. Sprinkle powdered chocolate.

Chef's Tip: To prevent the banana from darkening, spread lemon over it or flaming it before using.
