Instructions

1 lb of sirloin steak
1 lb pork 1-2 pork chops
1 large onion reserve ¼ cup for later
1 green pepper or mix of red and green peppers.
2-3 cloves of garlic
24 oz can of pinto beans
24 oz can crushed tomatoes.
2-3 Beers 1 strong beer for the chili and 1-2 for the cook
¼ cup chili powder
Salt and Pepper to taste
7oz can Chipotle Peppers in Adobo Sauce (Optional) great smokie spicy zing
Mexican cheese
Sour Cream
Instruction
Crockpot method
Cut the meat up into bit sized pieces, cut up the peppers and onions. Combine meat, onions, peppers, beans, tomatoes, beer and spices into crock pot and cook for 5-8 hours
Server with reserved onion, cheese and sour cream.
Insta-Pot
Cut the meat up into bit sized pieces, cut up the peppers and onions. Sauté’ onion and peppers in the Insta-Pot for 10 minutes. Add the garlic and sauté’ for 2-3 minutes Combine meat, beans, tomatoes, beer and spices and chipotle peppers into Insta-Pot. Cook on high pressure for 45 minutes. Let the pressure release naturally or sit for an hour. The chill will remain blazing hot in the pot for 90+ minutes
Server with reserved onion, cheese and sour cream.
