Papaya season is over and I am using up my last papaya. This cake has a mix of tropical fruit tastes that will take you to a tropical paradise in your own home. You can substitute the pineapple juice with rum for an even better staycation!

Papaya Raisin Upside Down Cake | Bahamian Cake | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1/2 cup (75g) RAISINS
• 1/4 cup (60ml/65g) PINEAPPLE JUICE (or rum)
• 1 tbsp (15g) LEMON JUICE
• 1 cup (200g) RIPE PAPAYA, DICED
• 1 cup (140g) ALL PURPOSE FLOUR (plain flour)
• 2 tsp (10g) BAKING POWDER
• 1/4 tsp BAKING SODA
• 1/8 tsp (a pinch) SALT
• 1/4 cup (60g) UNSALTED BUTTER, MELTED
• 1/4 cup (50g) BROWN SUGAR
• 2 EGGS
• 1/3 cup (67g) SUGAR
• 1 tsp (6g) VANILLA FLAVOR
• 1/4 cup (60ml) COCONUT OIL (vege oil)
• 1/2 tsp (3g) ALMOND FLAVOR (optional but enhances flavor)
• 1/4 cup (65g) SOUR CREAM
• 1 tsp (2g) LEMON ZEST
• 1/3 cup (35g) UNSWEETENED DESICCATED COCONUT

HOW TO MAKE IT:
1. In a small bowl, soak the raisins in the pineapple juice (or rum) and lemon juice and set it a side for about 10 minutes
2. In a medium mixing bowl, whisk together flour, baking powder, baking soda and salt until combined
3. Greased and lined your pot/pan with parchment paper, then pour in the melted butter
4. Drain out 2 tablespoons of raisins and distributing all over the bottom of the pot/pan
5. Evenly place about 4-5 tablespoons of diced papayas onto the bottom of the pan
6. Sprinkle the brown sugar on top then set it a side
7. In a large mixing bowl, whisk together the eggs, sugar, vanilla, oil, almond flavoring, sour cream, lemon zest, remaining raisins plus juice and diced papaya until combined
8. Add flour mixture and fold until smooth. Fold in desiccated coconut to incorporate
9. Pour the batter into your pot/pan and tap a few times to evenly distribute the batter
10. Bake for 2 bake cycles (60 min) and check. Rice cooker varies so bake longer if needed. Mine took 3 bake cycles (90 min)
11. Cool for 5-10 minutes then remove it from the pot/pan while it is still warm

OVEN BAKING:
Bake in pre-heated oven of 350F (175C) for 35-45 minutes. Ovens varied so check around 35 minutes and bake longer if needed
