This flan is creamy, rich and SWEET! It's super easy to make. I am basically steaming this in my electric rice cooker but you can use any steamer. Or bake it the traditional way, in the oven, in a hot water bath. Double the recipe for larger quantity and use one whole can of sweetened condensed milk and evaporated milk. Satisfy your sweet tooth!
Flan With Sweetened Condensed Milk & Evaporated Milk | Leche Flan | EASY RICE COOKER CAKE RECIPES
INGREDIENTS:
CARAMEL
• 1/3 cup (65g) SUGAR
• 1 tbsp (13g) WATER
FILLING
• 6 EGG YOLKS (5 large)
• 3/4 cup (200g) SWEETENED CONDENSED MILK
• 3/4 cup (200g) EVAPORATED MILK
• 1 1/2 tsp (8g) LEMON JUICE
HOW TO MAKE IT:
1. To make the caramel, I used my air fryer cake pan (6 inch) directly on the rice cooker heater to cook the sugar. Stir when it starts to boil and rotate the pan to get even heat on the bottom; until dark in color. I had to hold the "COOK" button in on the last few seconds because it went into WARM before the caramel started to get dark. Removed from heat just when it starts to smoke a little. Then set it aside to cool and set. Optionally, you cook the caramel in a non-stick pan over medium heat on the stove top and pour it into the baking pan
2. Whisk the filling ingredients for about 1 minute and then strain it two times, to remove any lumps. This will give you a smooth texture flan
3. Strain it a third time into your prepared caramel pan
4. To steam the flan, pour 1 cup of water into the rice cooker inner pot and use a trivet to elevate the pan. Cover with paper towel or clean cloth to catch condensation then press cook. Let it cook until it goes into WARM status. Mine took about 20 minutes. Then unplugged rice cooker
5. Flan is done when surface is soft to the touch but does not stick and jiggles when shaken. It will continue to set as it cools. Remove from heat and cool completely at room temperature. Then refrigerate for 4 hours or overnight before turning upside down and serving
OVEN BAKING:
1. Pre-heat oven to 350F (170C)
2. For hot water bath, place flan pan inside a bigger baking pan; then pour hot boiling water into the bigger baking pan; about 2 inches. Place this into the oven
3. Bake for 30-45 minutes. Ovens varied so check about 35 minutes and bake longer as needed
