Longer Days Means Homemade Egg Noodles

The sun is shining, the days are longer, and the chickens are increasing their egg production! In this video, Erin and Clara use some of their chicken eggs to make homemade egg noodles for the freezer.

Homemade Egg Noodle Recipe:
4 cups (120g) all-purpose flour
3-4 eggs
1 tsp (5mL) salt
2-3 Tb (30-45mL) milk
Mix flour and 3-4 eggs in a bowl with a fork. Add salt. Add milk a little at a time until the mixture comes together. Then turn the mixture out onto a floured surface and kneed until the dough feels dense and will hold a fingerprint. Cover with plastic wrap and let the dough rest for 30 minutes. Then cut the dough into fourths. Use a rolling pin or pasta roller, thin one of the sections of pasta to about 1/4 inch (6mm). Cut the dough using a knife, pizza cutter, or pasta cutter. Dust the pasta with flour and cover with a towel. Let sit for 2 hours (or overnight, depending on how dry you like your noodles). Cook your noodles in boiling broth, or place them in a freezer bag and place them in the freezer for later use. Using frozen noodles: Bring broth and chicken to a boil, add frozen noodles and boil for 20 minutes. Add thickening agent (flour, cornstarch, etc). Bring back to a boil to thicken and serve!
