Ingredients:
Sponge cake:
3 eggs
1/2c sugar sugar
1 c cake flour
30g vegetable oil
30 g milk

Frosting:
2 c heavy whipping cream
¼ c sugar

Topping:
1/3 c blueberry(I only use 8 for decoration)
1 lb strawberry(hulled & sliced)
1 tbsp lemon juice
1/4 c sugar

Instructions:
Spongy cake:
1. With 3 eggs, separate the whites and the yolk.
2. Beat 3 egg whites and add sugar in thirds for about 5-6 min or until light and fluffy.
3.Add the egg yolks into the egg whites, mix evenly.
4. Add the sifted flour into the egg mixture and fold carefully until lumps disappear.
5.Take ½ c of the batter and add milk and oil to it, mix well. Pour the mixture back into the batter and fold evenly until fully incorporated (don’t over mix).
4. Grease a 7”x 4” round baking pan and put the parchment paper on top.
5. Pour batter into the round baking pan. Tap several times to release the bubbles.
6. Bake 350˙ C for 30 minutes. After baking, let the cake cool for one hour.
7. Beat 2 cups of heavy whipping cream and sugar on high speed for 5 minutes or till foamy and stiff. Cover and keep in the fridge.
8. Dice strawberry and mix with 1tbsp lemon juice, and ¼ c sugar.
9. Split the sponge cake from the middle into two layers.
10.Add the strawberry spread evenly on one layer and drizzle some of the strawberry liquid. Spread frosting evenly on top of the strawberry. Put the second layer of sponge cake on top. Spread the whipped cream on the top and the sides evenly.
10. Mix blueberries and sugar.
10. Decorate the top with blueberries.

30克牛奶

鮮奶油:
2 C鮮奶油
¼c糖

裝飾:

1磅草莓(去蒂頭和切片)
1湯匙檸檬汁
1/4 c糖

作法:
海綿蛋糕:
1.將3個雞蛋分開蛋黃和蛋白。
2.打3個蛋白,並將糖分三次加入約打5-6分鐘,或靶到蛋白堅挺。
3.將蛋黃加到蛋沫中,混合均勻。
4.將過篩的麵粉加到雞蛋混合物中,並仔細折疊,直到團塊消失。
5.取½c的麵糊,加入牛奶和油中,拌勻。再將其混合液倒回麵糊中,並均勻折疊直至完全混合(不要過度混合)。
4.給7“x 4”圓形烤盤塗油脂,然後將烘焙紙放在上面。
5.將麵糊倒入圓形烤盤中。
6.烘烤350°C 30分鐘。烘烤後,讓蛋糕冷卻一小時。
7.高速攪拌2杯鮮奶油和糖5分鐘,直到泡沫變硬。蓋好並保存在冰箱中。
8.將草莓切成小方塊,並與1湯匙檸檬汁和¼c糖混合。
