Smoked Pork Steaks - Monroe County Style

Last night I did Monroe County style pork steaks on my Pit Boss smoker/pellet grill. They came out phenomenal. Here’s an approximately four minute video on how the process went. Note: if you can’t find the hatch chilies powder then just use all cayenne or cayenne to taste. Also make sure to use course kosher salt not table salt
Dipping sauce:
1 cup apple cider vinegar
1 cup white vinegar
1 stick butter
4 tsp black pepper
4 tsp course kosher salt
2 tsp hatch chili powder (optional)
2 tsp cayenne pepper powder (optional)
You can use all one vinegar or the other and all cayenne pepper works fine if you want the heat. If you don’t want the heat - cut back or eliminate the hatch and/or cayenne
