Traeger Smoked Whole Chickens

I have wanted to cook some whole chickens in my Traeger, and yesterday, I finally did it. I cooked 3 whole chickens - and seasoned them all differently, to try some different things. One of them was seasoned with Poultry Seasoning and Lemon Pepper, the second with some KC Masterpiece BBQ Seasoning, and the third with a homemade concoction that I found on the internet, with some Cayenne for a little kick.

I put them on the Traeger at 250 degrees and put temp probes in 2 of the 3 birds. I ended up leaving them on for 3 1/2 hours - that is when they reached 165 degrees internal temp. They were absolutely amazing - and quite simple to make.

Then I cut some Potatoes into wedges, tossed them in Olive Oil, and seasoned with Garlic Salt, and Black Pepper. Then I added a Veggie Medley (Broccoli, Cauliflower, and Carrots) - tossed in Olive Oil and coated with Salt and Pepper. I bumped the temp up to 325 and cooked them until done. Then we added some Bushes Grilling Beans and Whole Kernal Corn.

The chicken came out absolutely perfect - it was juicy, with a good smokey flavor, and the kick from the Cayenne just topped it all off. Most of the recipes that i found online and the people that I talked to smoke whole chickens at a higher temp than I did -but I like them to be on the Traeger a bit longer and get more of smoke flavor.
