Salsa Chicken is a great head-start ingredient to add to your weekend meal prep! Here are three super easy ways to enjoy your chicken!

SALSA CHICKEN RECIPE:

1.25 boneless chicken breast
1 onion, sliced
1 bell pepper, cut into strips
1 14 oz. jar (1.5cups) salsa (I love chipotle flavored salsa)

Place everything in the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.

30 minutes before the chicken is done, remove it from the pot and shred with two forks. Place the chicken back in the pot, mixing it into the salsa, and let it cook for another 30 minutes.
