Mofongo Fried Plantain Balls

Nothing screams Puerto Rico and the Caribbean Islands better than Mofongos. Mofongos are green plantain fried and seasoned with garlic, adobo, and olive oil and formed into heavenly mofongos plain or stuffed with shrimp in creole sauce often served with a light chicken or beef broth or soup.
