Beef Birria Taco Bowls 🔥

1 tbsp butter
1 tbsp avocado oil
32 oz beef broth
3 guajillo (dried + seeds removed)
2 ancho (dried + seeds removed)
2 chipotle peppers
1 lg carrot (peeled + diced)
1 onion (sliced)
5 garlic cloves (smashed)
1 cinnamon stick
1 pinch ground clove
mexican oregano
salt
pepper
