Cashew Chicken/腰果雞丁
Ingredients:
marinade:
½ lb chicken
1 egg white
½ c cornstarch
1/8 tsp salt
1/8 tsp black pepper
sauce:
2 tbsp oyster sauce
1 tbsp soy sauce
1 ½ tsp sugar
1 tsp sesame oil
1 tsp cornstarch
1 tbsp water
1 tsp salt
½ c cornstarch
5 red chili pepper
½ onion
3 clove garlic
½ red bell pepper
½ green bell pepper
1 celery stem
2 tbsp oil
1 c cashews
Instructions:
1. Dice the red chili pepper, onion, garlic, red pepper, green pepper, and celery.
2. Dice the chicken.
3. Mix the sauce ingredients well.
4. Marinade the chicken with egg white, salt, and black pepper.
5. Pour in cornstarch and chicken in portions and stir.
6.Heat the oil in a deep-fryer to 350 degrees F (175 degrees C), If you don’t have a candy thermometer, place a wooden spoon or a bamboo stick into the hot oil. If the oil bubbles form around the spoon, the oil is hot enough.
7. On medium heat, fry the chicken for 2 min. Take out and let sit for a minute.
8. Add 2 tbsp oil to the wok, then roast the cashews on low heat for a min. Take out and set aside.
9. On medium heat, add garlic into wok and stir. Add onion, celery, and stir for 30 seconds.
10. Add red and green bell pepper and stir. Turn down the heat to low, add the sauce while stirring.
11. Meanwhile on another stove. Fried chicken for the second time for 30 seconds.
12. Pour the chicken and cashews into the wok and stir quickly, then serve.

½青椒
1個芹菜莖
2湯匙油
1 C腰果
說明:
1.切碎紅辣椒,洋蔥,大蒜,紅辣椒,青椒,芹菜。
2.雞肉切丁。
3.將醬汁的材料混合。
4.用蛋白,鹽和黑胡椒醃製雞肉。
5.倒入玉米粉和雞肉,攪拌。
6.將油炸鍋中的油加熱到350華氏度(175攝氏度)。如果您沒有溫度計,用筷子插入熱油中。如果筷子周圍有氣泡出來,則說明油足夠熱。
