Crunch Crispy Fried Sweet Potato and Fried Sauce/酥脆炸地瓜

Ingredients:
1 lb sweet potato(or yam)
1000 ml cooking oil

fry sauce:
1 c mayonnaise
¼ c ketchup
1 tsp pickle juice
6 sliced dice pickles
1/8 tsp paprika
½ tsp sugar
1/8 tsp salt
dredge ingredients:
1 c flour
2 tbsp cornstarch
1 tsp garlic powder
1 tsp paprika powder
1 tsp salt
½ tsp baking powder

Instructions:
1 Dice 6 slices of pickles.
2. Mix fried sauce ingredients well.
3. Peel the sweet potato and cut them into wedge shapes. Soak in water.
4. Mix fried powder ingredients well.
5. Take the sweet potato out from the water. Sprinkle the dredge on it, shake, and toss it.
6. Sprinkle some water if sweet potato is dry.
7. Heat the oil in a deep-fryer to 350 degrees F (175 degrees C), If you don’t have a candy thermometer, place a wooden spoon or a bamboo stick into the hot oil. If the oil bubbles form around the spoon, the oil is hot enough.
8. Fry for 2 min. Take out sit for a min. Fried the second time for 30 seconds or until golden brown. Immediately drain from the oil and salt the fries.

酥脆炸地瓜
材料:
1磅紅薯(或地瓜)
1000毫升食用油
醬料:
1 C美乃滋
¼c番茄醬
1茶匙酸黃瓜汁
6片切碎酸黃瓜
1/8茶匙辣椒粉
½茶匙糖
1/8茶匙鹽
炸粉:
1 C麵粉
2湯匙玉米粉
1茶匙大蒜粉
1茶匙辣椒粉
1茶匙鹽
½茶匙泡達粉

作法:
1. 6片酸黃瓜切丁。
2.混合醬料材料。
3.地瓜去皮,切成長形。浸在水中。
4.混合炸粉材料。
5.從水中取出紅薯。將粉末撒在上面,搖勻。
6.如果地瓜乾,撒些水,可以裹較多的粉。
7.在油炸鍋中將油加熱到華氏350度(攝氏175度),如果沒有糖果溫度計,請將木勺或竹籤放入熱油中。如果湯匙周圍有油泡,則說明油已足夠熱。
8.炸2分鐘。拿出來靜放1 分鐘。第二次炸30秒。撒上鹽和胡椒粉
