MAPO TOFU RECIPE/麻婆豆腐

Ingredients:
1 lb medium-firm tofu
2 tbsp salt
1000ml water

½ lb ground pork
3 tbsp cooking oil
1 green onion
5 pieces garlic
10g ginger
2 1/2 cups water
1-2 tsp Sichuan peppercorns
2 tbsp Chinese bean chili paste(doubanjiang)
1 tsp sugar
1 tbsp soy sauce
1 tsp cornstarch +2 tbsp water
2 tbsp sesame oil

Directions:

1. Drain out the tofu and carefully slice it into the cube.
2. Boil water, add salt to cook tofu for 5 min.
3. Chop the green onion, garlic, and ginger.
4. Low heat roast Sichuan peppercorn. Be careful don’t burn it. Grate it.
5. Heat 2 tbsp of sesame oil, add Sichuan peppercorns powder and cook for one minute. Drain it.
5. Heat oil. Sauté ground pork till the pork is a bit of brown.
6. Add chili paste to cook for one min, add ginger and garlic.
7. Add water, tofu, soy sauce, and sugar to cook for five min.
8. Turn down the heat, add cornstarch water to thicken the sauce.
9. Finally, drizzle Sichuan peppercorn oil, grate Sichuan powder, sesame oil, and green onion on top.

麻婆豆腐
配料:
1磅中等豆腐
2湯匙鹽

半磅豬絞肉
3湯匙食用油
1個蔥
5粒大蒜
1小塊姜
2 1/2杯水
1-2茶匙四川花椒
2湯匙辣椒醬(豆瓣醬)
1茶匙糖
1湯匙醬油
2茶匙玉米粉+ 1湯匙水
2湯匙香油

作法:
1.豆腐倒掉水,切成方塊。
2.燒開水,加鹽煮豆腐5分鐘。
3.切碎蔥,大蒜和姜。
4.小火炒四川花椒。注意不要炒焦。磨碎它。
5.加熱2湯匙麻油,加入四川胡椒粉,煮一分鐘。瀝乾它。
5.油加熱。將豬肉炒熟,直到豬肉變焦黃。
6.加入辣椒醬煮一分鐘,再加入薑和大蒜。
7.加水,豆腐,醬油和糖煮三分鐘。
8.調低火勢,加玉米澱粉水使醬汁增稠。
9.最後,在上面淋上四川花椒油,四川花椒粉,香油和蔥。
