Double Crispy Fried Chicken/炸脆雞
Ingredients:
1/2 Chicken breast
1 c Flour
1 Egg
1 tsp Salt
1 tsp Garlic
1 tsp Pepper
1 tsp Paprika
1.5 c Water
2c Sweet potato starch
oil
20g Cabbage
1 tbsp Ketchup
2 tbsp Mayonnaise
½ Tomato
Instructions:
1. If your chicken is too thick, cut it into two pieces.
2. On a large plate, combine flour, egg, salt, garlic, paprika, salt, pepper, and water. Mix well.
3. Heat the oil in a deep-fryer to 350 degrees F (175 degrees C), If you don’t have a candy thermometer, place a wooden spoon or a bamboo stick into the hot oil. If the oil bubbles around the spoon, the oil is hot enough.
4. Dip chicken in the batter, then dip in the dry sweet potato starch. Let it sit for a min.
5.Use tongs or a slotted metal spoon to place chicken in the hot oil for 5 min(I cut my chicken thinner). On the other side cook for 3 min. Use medium heat to fry.
6. Take the chicken out and set for a min. Do the second time fried for a min.
7. Shred the cabbage thinly.
8. Slice tomato.
9. Mix well ketchup and mayonnaise.
10. Mix the sauce with cabbage.
