Taiwanese Night Market Snack/ Sweet Potato Ball/ 地瓜球

Ingredients:
300g sweet potato
50g sugar
130g sweet potato starch
40g sweet rice starch
500g cooking oil

Instructions:
1. Peel and cut sweet potato thin.
2. Boil water. Steam for 10-15 min.
3. Smash sweet potato and add sugar while it still hot. Mix well.
4. Add sweet potato and sweet rice starch. Mix well.
5. If too dry, add a little water. If too wet, then add a little starch.
6.Heat the oil. Turn to low heat. Slowly drop in the ball to fried. Do not stir at the begging. Wait till the balls flow on the surface, then you start to move around the balls.
7. Use the spatula to squeeze down the balls a couple of times to make them bigger.
8. Before you take the balls out, turn up the heat to fried for about 10 seconds.

3.搗爛地瓜,趁熱加入糖。拌勻
4.添加地瓜粉和糯米粉。拌勻
5.如果太乾,加一點水。如果太濕,則加一點地瓜粉。
6.油加熱。轉低火。慢慢地把球放下來。先不要攪動。等到球浮上來,然後開始攪動。
7.用鏟子將球壓下幾次讓它變大。
8.在取出球之前,將熱量調高至油炸約10秒鐘。
