Sausage, Biscuit & Gravy Breakfast Casserole - Paleo, Nut-Free, Gluten-Free
Meal prep paleo time!
Before anyone yells at me....cashews are a drupe ;-) (The Paleo Mom says so)
You can easily sub out coconut milk and some extra tapioca starch as a thickener for the gravy if you have a cashew ish-shew. ;-)
When I was still doing private chef work, these were one of my client's FAVORITE meals, even the kiddos loved it. I hope you enjoy the casseroles too!
RECIPE:
1 lb uncured loose breakfast sausage, browned and crumbled
(for nightshade-free, check your sausage for ingredients like cayenne, paprika…or make your own at home with ground pork or turkey and your choice of safe seasonings)
GRAVY
2 cups homemade cashew milk (get the easy recipe here)
1/4 tsp smoked paprika (for nightshade-free: sub smoked salt and omit the Himalayan salt) get the recipe here
Himalayan salt and black pepper to taste
BISCUITS
1/2 cup cassava flour
2 Tb tapioca starch
1/4 tsp Himalayan salt
1/2 tsp baking soda
2 1/2 Tb sustainable palm shortening
1/4 cup cold water
2 tsp apple cider vinegar
6 eggs, whisked
Instructions:
Preheat convection oven to 375, or 425 F for conventional.
Brown the sausage, then use some of the fat to grease 3 small casseroles with oil.
Divide sausage between 3 casseroles and set aside.
Make the gravy by whisking all GRAVY ingredients together in a medium pot over medium heat until nice and thick, about 5 minutes.
Set aside to cool slightly while you make the biscuits.
Add dry BISCUITS ingredients to a medium bowl.
Cut in the shortening with a fork, then stir in the water and vinegar until smooth.
Knead to form a ball, then divide into 12 balls.
Pat the balls (using both hands) into approx 2.5" flat discs and set aside.
Pour the whisked eggs evenly over the top of the sausage in the casserole dishes.
Drizzle the gravy over the top of the eggs carefully but sort of haphazardly so it leaves some spaces for the egg to peek out.
Finally, gently place the biscuit discs over the tops of the casseroles.
Bake 20 mins or until eggs are ALMOST set. They will continue to cook after removed from oven, so its best to slightly undercook them versus over cook and have rubber casserole. ;-)
If doing for meal prep, reheat individual casseroles in a convection countertop oven (or in your oven) at 300F for about 15 minutes. Check the internal temp so it reaches at least 165F.
