Vegan, Gluten Free, Dairy Free Chocolate Candy Cane Christmas Cake

I thought of this recipe at the grocery store when a bag of peppermint candy was on sale! I think this is one of the best Gluten Free Dairy Free Vegan Cakes that I have ever eaten! This recipe took a bit of trial and error to get it just right but it turned out delicious. I hope you enjoy! Gather the ingredients and cook with me!

Ingredients:
3 c gluten free flour
2 c sugar
1/2 c cocoa powder
2 t baking soda
1 t baking powder
1 t sea salt
1 c coconut milk full fat from can
3/4 c extra virgin olive oil
2 T white vinegar
2 t vanilla
1 c hot water

peppermint candy crushed
4 oz dairy free cream cheese
9 oz coconut whip - dairy free version of Cool Whip
1/2 c powdered sugar
1/4 t peppermint extract

2 c dairy free dark chocolate chips
3/4 c coconut milk full fat from can
1 1/2 c powdered sugar
1/2 t peppermint extract
