Pan-fried potstickers,Juicy & Crispy /煎餃又脆又有汁
Potstickers are a type of dumpling. They are usually filled with pork and cabbage, as well as all kinds of veggies. They are pan fried and steamed, which create nice crispy exterior and a juicy interior.
Ingredients:
2 package dumpling wrapper (about 33 pieces for one package)
Filling:
500g ground pork
150g ground pork fat(option)
1 egg
2tsp ginger
1tsp salt
1tsp soy sauce
1tsp white pepper
1tbsp cooking rice wine
1tsp sesame oil
¼ c chicken broth
100g chives
500g cabbage+salt ½ tsp
Flour water:(for 7 potstickers)
1tsp flour
50cc water
Sauce for dipping:
1tsp soy sauce
1tsp sesame oil
1tsp chili sauce
Instruction:
Stir the ground pork and ground pork fat. Add all seasonings and stir well. Slowly add 1/4 cup of chicken broth to the meat a third at a time, stir in a circular motion, and refrigerate for half an hour. Mix the cabbage and salt well and let stand for 10 minutes. Squeeze the water from the cabbage.
Put the pork, cabbage, and chives together, stir evenly, fill the skins and cook them.

煎餃
材料:
攪豬肉500g
攪肥豬肉(可選)150g
1個雞蛋
姜2茶匙
鹽1茶匙。
醬油1茶匙
白胡椒1茶匙
米酒1大匙
麻油1茶匙
雞湯¼c
韭菜100克
高麗菜500g +鹽½茶匙
麵粉水材料:
麵粉 1小匙
水 50cc
沾料:
1茶匙醬油
1茶匙麻油
1茶匙辣椒醬
作法
*將攪豬肉和攪肥豬肉一起攪拌。添加所有調味料並充分攪拌。將1/4杯雞湯分3次緩慢添加到肉中,以順時針方向攪拌,並放置半小時。
*高麗菜和鹽拌勻,靜置10分鐘。將水從白菜高麗菜中擠出。
*豬肉,高麗菜,韭菜一起放進,攪均勻,就可以準備包餃子
