How to make Shrimp & Chicken Stir Fried Lo Mein/怎麼做蝦仁炒麵

This is one of my favorite ways to prepare dry noodles. This is a pretty basic recipe, so if you’d like it spicier or with other ingredients, go ahead and add them.

Ingredients:
marinade:
• ½ chicken breast
• 20 shrimp
• 1 egg white (half for chicken , half for shrimp)
• pinch of salt
• pinch of black pepper
• ½ tsp cooking wine
• 1/2tsp cornstarch(for each of them)
Noodle:
• 270g pancit noodle( I used half of bag)
• water (enough to cover noodles)
• 75g carrot
• 75g onion
• 10g bean sprouts
• 100g bok choy
• 100g napa cabbage
• 60g chive
• 5g cilantro
• 4 tbsp cooking oil (2 tbsp for each, chicken & shrimp)
• 2 tbsp cooking oil fried noodles
• ½ c chicken broth
• 1 tsp chicken powder
• 2 tbsp oyster sauce
• 1 tsp white pepper
• 1 tsp worcestershire sauce
• 2 tsp sesame oil

PREPARATION
1. Cook noodles in hot water for 3 minutes until softened. Drain noodles. Drizzle a little oil on the noodles so they don’t stick together.
2.Slice chicken breast and marinade for about ten minutes
3. Marinade shrimp in a separate bowl for about ten minutes
4. Chop all veggies.
COOKING
5. Heat 2 tbsp vegetable oil in a wok on high heat
6 Add chicken to the wok, stir-fry for 1-2 minutes. Remove from the wok and set aside.
7. Add shrimp stir- fry to the wok, for 1-2 minutes. Remove from the wok and set aside.
8. Add the oil, sauté the onions and carrots for 2 minutes until fragrant.
9. Add the rest of the veggies, chicken broth, chicken powder and oyster sauce to the wok, stir fry for 2 minutes, then add the noodles and mix well.
10. Add the bean sprouts cilantro, a dash of sesame oil, white pepper, Worcestershire sauce and serve.

蝦仁炒麵
我最喜歡炒麵。您可以放入自己喜歡的各種菜,辣的或不辣的。沒有肉或蝦也很好。就這麼簡單
配料:
醃料
½片雞胸肉
20只蝦
1個蛋清(雞半個,蝦半個)
鹽少許
少許黑胡椒
½茶匙料酒
1/2茶匙玉米澱粉(雞, 蝦個半匙)
麵條:
275g炒麵(我用半包)
75克紅蘿蔔
75克洋蔥
10克豆芽
100克白菜
100克清江菜
60克韭菜
5克香菜
4湯匙烹調油(雞和蝦各2湯匙)
2湯匙食用油炒麵
½c雞湯
1茶匙雞粉
2湯匙蠔油
1茶匙白胡椒
1茶匙伍斯特郡醬
2茶匙麻油

作法:
1.麵條在熱水中煮3-5分鐘直至變軟。濾水,淋些油,以免粘在一起。
2.切絲雞胸肉和醃料混合
3.醃製蝦。
4.切所有的蔬菜。
烹飪
5.將2湯匙植物油放入鍋中加熱至高溫
6.加入雞肉炒1-2分鐘。從鍋裡拿出來。擱置
7.加入2湯匙植物油放入鍋中加熱至高溫, 蝦炒1-2分鐘。從鍋裡拿出來。擱置。
8.加入油炒洋蔥和紅蘿蔔2分鐘。
9.加入其餘的蔬菜,​​雞湯,雞粉和蠔油醬,再炒2分鐘,最後加入麵條,將所有成分均勻攪拌均勻。
10.加入豆芽,香菜,少許香油,白胡椒粉,伍斯特郡調味醬即可食用
