Gluten Free Dairy Free Red Velvet Cake

This was my first attempt at red velvet cake of any kind, much less a dairy free, gluten free version and it turned out fantastic! Perfect for Christmas! I am so happy to have a gluten free dairy free version of red velvet cake, one of my favorites :) Gather the ingredients and cook with me!

Ingredients
2 1/4 c gluten free flour
4 T+ 1 1/2 t arrowroot
1 t baking soda
1/2 t sea salt
2 T cocoa powder
2 eggs
1 1/2 c sugar
1 c light flavor oil (Use butter olive oil with 1/4 of the cup, if available)
1 c coconut milk
1 T vinegar
2 t vanilla extract
1 oz red food coloring (1 large red food coloring)
coconut oil spray or any spray oil
1/2 c dairy free butter
8 oz dairy free cream cheese
1 t vanilla extract
1 lb powdered sugar
1 c toasted chopped pecans
