How to make Cream Cheese Icing with Cocoa Garnish

Instructions:
For Cream Cheese Icing
Makes enough icing for 15 cupcakes (double as needed)
456gm Cream Cheese
226gm Butter
100gm Confection Sugar
1.) Beat butter and confection sugar in a mixing bowl for 2 minutes.
2.) Add in the cream cheese and beat for an additional 1 minute in a fast speed. DO NOT OVERMIX!
3.) Mix the mixture again using a spatula making sure to get the icing off of the sides of the bowl.
4.) Voila! The icing is ready to use. Transfer it to a piping bag and get creative.

For Chocolate Garnish
100gm Chocolate
2000gm Water
750gm Ice
1.) Bowl water and set aside.
2.) Chop three bars of dairy milk chocolate into small pieces.
3.) Place the chocolate into a glass bowl and melt it over boiled water. MAKE SURE TO MELT IT SLOWLY!.
4.) Transfer the melted chocolate to a piping bag.
5.)Grab another bowl, fill it with cold water and ice, and pipe chocolate into the water in a fast motion.
6.) Grab the chocolate garnish, dry it off, and it's ready to use!
