SOUTH AFRICA - Cape Town - 190411 - Providing dried snoek, a traditional Cape dish from the family business, De Freitas Fish, in Lotus River, is a legacy which spans four generations. The fish is bought from small scale fishers from twelve different local harbors. It is then brought home and processed on the premises. This process involves cutting, cleaning, salting, rinsing and then hanging the fish out to dry (in that order). The drying is a natural process utilizing a combination of direct sun and wind. The fish in hung out daily for four days, after which it is refrigerated and ready to be packaged and sold to various buyers.
