What Are Truffles and Why Are They So Expensive?

Sorry, this isn't chocolate we are talking about here. No, far from it. These are fresh truffles, a subterranean fungus that grows under oak trees, hazelnut trees, and beside the tree roots in places like Italy, France, the Pacific Northwest, the Middle East, and even China. There are over 40 different kinds of truffles including the Black or Perigord truffle (Tuber melanosporum), Winter truffle (Tuber brumale), Summer truffle (Tuber aestivum var. aestivum), Burgundy truffle (Tuber aestivum var. uncinatum), Oregon Black Truffle (Leucangium carthusianum) and, Oregon White Truffle (Tuber oregonense), with each concentrated in a particular region of the world. The Italian countryside and French countryside being rich places of growth. Black truffles grow with the oak and hazelnut trees in the Périgord region in France. Burgundy truffles can be found throughout Europe in general, like the black summer truffle.
