Organic cheese maker Eden Valley Creamery getting ready for Grand Opening
Jenny McKenna has her work cut out for her. She has to fill a huge, room sized walk in cooler with cheese. Jenny is the the processing plant manager and cheese maker for Eden Valley Creamery, a new operation making organic cheese in South Dayton. Jenna got her first taste of cheese making in college at Cornell University, she says "I did an internship at school on a dairy farm and I fell in love with cheese making." The plant is turning out Gouda, Havarti, swiss and cheddar cheese curds. For now the cheese making operation is a one person job. Jenny is the only employee at the the cheese plant and says "being the only person here, there's plenty of things to do." Eden Valley Creamery plans their grand opening sometime this Summer and will offer a place for visitors to buy cheese and see some of the cheese making process.
