Chicken Mayo Paratha Recipe | Ramadan Special Recipe By Spice Bite By Sara
This Chicken Mayo Paratha is a perfect fusion of crispiness, creaminess, and spice, making it an ideal choice for iftar. The golden, flaky paratha is layered with a rich and tangy mayo sauce, a bold and flavorful green chutney, and tender, spiced chicken. Topped with fresh onion rings for an added crunch, each bite bursts with a perfect balance of flavors. Served hot, it’s a comforting yet indulgent treat that will leave everyone craving more.
Ingredients:
Prepare Chicken:
-Dahi (Yogurt) 1/2 cup
-green chili sauce 2 tsp
-Adrak lehsan paste (Ginger garlic paste) 1/2 tbsp
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Namak (Salt) 1 tsp or to taste
-Baisan (Gram flour) roasted 2 tbs
-Garam masala powder 1 tsp
-Haldi powder (Turmeric powder) 1/2 tsp
-Zeera powder (Cumin powder) 1 tsp
-Zarda ka rang (Orange food color) 1/4 tsp
-Boneless chicken cubes 500g
-Cooking oil 4-5 tbsp
-Pani 1 cup ( Water )
-Koyla (Charcoal) for smoke
Prepare Mayo Sauce:
-Dahi (Yogurt) 1 Cup
-Mayonnaise 1/2 Cup
-Lehsan paste (Garlic paste) 1 tsp
-Namak (Salt) 1/2 tsp or to taste
Prepare Hari Chutney:
-Imli pulp (Tamarind pulp) 1/2 Cup
-Hari mirch (Green chilies) 4 -3
-Sabut lal mirch (Button red chilies) 4-5
-Lehsan (Garlic) 7 -8 cloves
-Adrak 1 inch ( Ginger )
-Namak (Salt) 1/2 tsp or to taste
-Zeera (Cumin seeds) 1 tsp
-Hara dhania (Fresh coriander) 1 Cup
-Podina (Mint leaves) 1 Cup
Assembling:
-Paratha
-Pyaz (Onion) rings
Directions For Cooking:
Prepare Chicken:
-In a bowl, add yogurt, green chili sauce, ginger garlic paste, red chili powder, coriander powder ,salt, gram flour ,garam masala powder ,turmeric powder, cumin powder ,orange food color & whisk well.
-Add chicken & mix well, cover & marinate for 30 minutes.
-In a frying pan ,add cooking oil ,marinated chicken & cook for 2-3 minutes then add water mix well ,cover & cook on low flame until chicken is tender (8 -12 minutes) then cook on high flame until it dries up.
-Give coal smoke for 2 minutes.
Prepare Mayo Sauce:
-In a bowl ,add yogurt, mayonnaise ,garlic paste, salt, whisk well & set aside.
Prepare Hari Chutney:
-In a blender jug ,add tamarind pulp, green chilies, button red chilies ,garlic , ginger ,salt, cumin seeds, fresh coriander, mint leaves, blend well & set aside.
Assembling:
-On a paratha ,add cooked chicken, prepared mayo sauce & hari chutney, onion rings ,roll out paratha & wrap in butter paper (makes 7-8).
-Enjoy with your paratha with your friends and family.
