They just make a statement and do not back it up. As far as the flag moving bit, I find it hard to believe that we would go into such intricate detail to make this look credible and overlook a majorly noticeable thing like that. As far as the footage from inside the craft, well they didn't prove or disprove anything, just formed an opinion and tried to pass it as proof. So it doesn’t matter which direction an aircraft flies, its speed is only relative to the earth and the Earth’s rotation doesn’t effect it at all other than the effect that winds have.
But there is one thing that people, and this question, seem to get wrong.
The Earth spins at slightly over 1000 mph only AT the Equator. As you move North or South the speed the Earth spins at decreases until you reach the poles where essentially you spin around essentially at zero mph.
How does that work?
There is a device that used to be very popular called a “Record Player.”
Imagine that the Earth’s Northern or Southern Hemisphere is flattened like a record. The outside circumference is analogous to the Equator and the center is analogous to a Pole.
When the record spins the circumference moves further and faster than any spot between the circumference and the center post. One full rotation of the record is equal to the length of the circumference while the distance travelled by the outside of the purple label in the picture above is substantially less. The Earth is exactly the same.
I'm not usually one for simple answers, but I'm going to give it a try.
The earth is like a basketball covered in a thick layer of molasses. Our atmosphere sticks to the surface of the earth like molasses to the basketball — not because of it's stickiness, but because of gravity. Gravity is a binding force that is associated with the massive density of the earth, which holds all things, living or dead, to that surface. People, cars, water, and even aircraft are stuck inside that molasses. Wherever it goes, we go. Even if we are floating of the surface of the ball, flying in an airplane, we're still in the molasses.
But here's the thing. Because the molasses moves with us, we sense no apparent motion of the ball. There's no 1000 mph wind in our face. If we want to move forward, we only need to swim forward in the molasses. The same with backwards. The molasses will resist our motion whichever way we go, the same way air does in our face, so we can only move slowly,. But it does not matter if we move with the rotation of the ball or against it. So there is no need to “catch up". We're already moving with the atmosphere, and with the earth, which are all moving at the same rotational speed as one system We just need to move within that system to travel to our destination.

For this to be possible, the atmosphere would have to not be rotating along with the solid portion of the Earth. But we know that it is, because it would be ridiculous if it weren’t. There would be a constant 1000 mph westward wind threatening to blow everything away the minute it wasn’t firmly anchored to the ground. I have never observed this. Have you?
Let’s take the hypothetical (and stupid) scenario of ground motion and air motion not being coupled together, and consider it from two different reference frames:

Helicopter takes off and maintains itself as stationary relative to the air. The ground rotates underneath it, so that points that were westward of where the helicopter started, eventually end up directly under it.

The helicopter takes off and is immediately blown away westward by the constant 1000 mph wind.
Again, I have never seen this occurring, because all components of Earth are rotating together, so their motion relative to each other is 0 mph. To elaborate: the motion of landed planes, and people, and the atmosphere, and everything else that is part of Earth, is 0 mph relative to Earth’s surface. Their motions are only 1000 mph relative to an external observer who is not rotating along with Earth.
The Earth DOES NOT spin at 1,000mph. It spins at 15 DEGREES per hour, or roughly half the rotational velocity of the hour hand of a 12 hour clock. This is a distinction lost on flat Earth trolls.
At the Equator, this equates to a tangential speed of roughly 1037mph *relative to the centre of the Earth*. At 60 degrees North or 60 degrees South latitude, this equates to a tangential speed of shy of 500mph *relative to the centre of the Earth*.
