The key to making a premium quality fancy strawberry jam is to start with the very best strawberries possible. And the best berries for making jam are the ripest most flavorful berries. Not the prettiest berries.

We don't need pretty.

We need flavor.

And to do that we work directly with our growers.

And there are only two growers in the entire world that can meet our standards.

We need a particular variety of strawberry.

They don't grow very large or pretty.

But the flavors they develop are second to none.

Then the berries must be left on the plant until they are fully ripe.

We want a beautiful red orange color all the way through.

I never want to cut into a strawberry and see even the smallest bit of white on the inside.

To give you perspective, the strawberries we use have developed three to five times the amount of sugars than what you'd typically find in the grocery store.
