Hearty tofu stew with semolina | Quick and tasty vegan meal

Today Gino shows you another idea for a quick but tasty vegan meal.

Semolina recipe:

1L soy milk
1 and 1/2 cup fine semolina
1 Tbsp nutritional yeast
1/2 tsp black pepper powder
2 tsp dried sage
1 tsp salt

Heat up the milk and bring it to boil. Lower the heat and add the semolina, whisking well until the desired consistency. Add some more liquid (water or more milk) if it becomes too thick. Add the nutritional yeast, the pepper, the sage and the salt, stir very well – and enjoy!

Tofu stew recipe:

1 Tbsp e.v.o.o. (enough to cover the bottom of the pan)
2 tsp miso paste
1/2 tsp cayenne pepper (*less if you don’t like spicy)
1/2 tsp mace
1/4 tsp ground clove
a packet of tofu
1 tin of chopped tomatoes
1 tsp salt (or to taste)

Heat up the oil and add the miso paste. Stir well and start breaking down the paste. Add the cayenne pepper, the mace and the ground clover. Stir well. Add the tofu. Stir well. Add the tin tomatoes. Stir well and let it cook for a few minutes. When it becomes a nice sauce, it’s ready. Salt to your taste.

Best served with the semolina and a fresh salad.
