Aloo Matar Pulao is a wholesome and comforting one-pot dish, perfect for Iftar during Ramadan. Made with fragrant basmati rice, tender potatoes (aloo), and green peas (matar), this pulao is gently spiced with cumin, cinnamon, and garam masala, offering a delicious balance of warmth and nourishment. Light yet filling, it provides sustained energy for fasting while being easy to digest. Serve it with cooling raita, dates, or a side of yogurt for a satisfying and soulful Ramadan meal.

Ingredients :

-Rice 3 cups ( Chawal )
-Green Peas 1 + 1/2 cup ( Matar)
-Potato 2 Large ( Aloo )
-Ginger , garlic paste 2 tbsp ( Adrak , Lehsun)
-Green Chilies 1 tbsp ( Hari Mirch )
-Tomato 1/2 cup ( Timatar )
-Salt 2 tsp ( Namak )
-Red Chili Flakes 1 tsp ( Dhara Mirch )
-Black Cardamom 3 ( Bari Elaichi )
-Star Anise 2 ( Badiyan Ka Phool )
-Clove 4 - 5 ( Laung )
-Cinnamon Stick 2 ( Dari Cheeni )
-Whole Black pepper 1 tsp ( Sabut Kali Mirch )
-Cumin Seeds 1 tsp ( Zeera )
Water 5 cups ( Pani )
-Green Chili 3 -4 ( Hari Mirch )
-fresh Coriander 1/2 cup ( Hara Dhania )
-Tomato Slice as required ( Timatar)
-Green Chilies as required ( Hari Mirch )

Direction For Cooking :

-Soak rice for 30 -40 mints.
-In a wok add oil add sliced onion cook until light golden color.
-Add green chilies , ginger , garlic paste and cook for a mins then add tomato mix well and cook for 2 mins.
-Add cumin seeds , black pepper , cinnamon stick , black cardamom , star anise cook it for a min.
-Add matar and cook for 2 mins then add aloo and cook for 2 mins.
-Add salt , red chili flakes mix it well and add water.
-Cover and cook for 5 -8 mins then add soaked rice.
-Cook until all water dries on high flame then cover and cook for 4 -7 mins on low flame.
-Your aloo matar pulao is ready serve with dahi rata .
